My all time favorite cookie recipe that I have converted to Gluten-free is old fashioned Chocolate Chip! Who doesn't love a Chocolate Chip Cookie right?
Well, the recipe is as follows:
Chocolate Chip Cookies
1/2 cup butter
1 cup packed light brown sugar
1/4 teaspoon baking soda
2 tablespoons water
1 teaspoon vanilla
1 3/4 cup Quick Mix (by Le Garden Bakery)
1 cup semi-sweet chocolate chips
Beat butter in medium bowl with an electric mixer on medium speed for 30 seconds. Add brown sugar and baking soda; beat till combined, scaping sides of bowl occasionally. Beat in egg, water and vanilla till combined. Stir in flour and chocolate chips with a wooden spoon.
Drop dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet. Bake in a 350 oven for 10 to 12 minutes or till edges are lightly browned. Cool on cookie sheet for 1 minute. Transfer to wire racks and cool completely. Store in an airtight container or plastic bag at room temperature up to 3 days. Makes about 48.
